Purple Artichoke.
(Cynara scolymus "French Purple")
The delicacy of French cuisine! Perennial vegetable with edible, fleshy flower buds. A unique variety with rose-coloured inflorescences. Edible portion of the buds consists primarily of the fleshy lower portions of the bracts and the base, known as the "heart". Buds are apple-sized. Buds can be collected from July to frost. They are used for casseroles, have unique and very refined taste, and are one of the most expensive dishes. Artichoke has exceptional healing properties: high content of luteolin, inulin and cynarin which lower cholesterol, prevent atherosclerosis and diabetes. Artichoke grows to 80 cm in height, forms a large rosette of ornamental blue-green feathery leaves. Likes sun and moist fertile soil. In colder climates winter protection is necessary.
